As we head into winter holidays, this seems like a good a time as any to talk about special holiday dishes. Dear Daughter has been going at it with the cookie-baking.

I'm still loving the air fryer. Last night I made an entire meal with the two we own.
The main dish was boneless chicken thighs. First I seasoned them with onion powder, garlic powder, and salt and air fried them at 360F for about 8 minutes until they were maybe 2/3 done. Then I pulled them out, dipped them in honey mustard salad dressing, and put them in to finish at 375 for another 5 minutes. Super simple and very tasty.
The carb was Alexia frozen sweet potato fries just simply done at high heat, 450F for 8 minutes. Put those in the oven to stay warm and used the same air fryer for green beans coated with EVO, onion powder, roasted garlic powder, paprika, a veggie seasoning mix, and salt.
My wife found perforated parchment paper discs that drop right into the air fryer which handle a lot of the gook from cooking and make cleaning up even easier than usual.

We've recently become enamoured of a new recipe called "Egg Roll in a Bowl" which is exactly what it sounds like.
There are literally dozens of these recipes on line. Just google the name.
Basic ingredients: A protein of some sort: Chicken, pork, beef, shrimp, or seafood. Fry in a wok or large pan add garlic and ginger, then a bag of cole slaw mix. Put in one TSP of sesame oil, salt and pepper to taste. Cook throughly and serve.

I make something vaguely similar using ground beef, onions, and shredded cabbage. The original recipe is called 'Crack Slaw'. Not sure where that name came from, but the dish is good and fast. I grew cabbage this past winter and it was especially sweet and tender in the 'crack slaw'.
Yesterday I made a taco salad. Ground beef, onion, flavorings (hot pepper, cumin, ground sage) mixed in a bed of sliced romaine, and shredded cheddar cheese. Quite yummy. Also quick to prepare.

I just purchased an airfryer (Ninja Foodi) from Costco. It is on sale this month. Looking forward to playing with it.

I recently went of a very successful trip for Golden Tilefish. I came back with about 14 lbs of fillets plus we've got some other fish from last fall. Black Sea Bass, Porgy, and Tautog/Blackfish season is coming up in November so I figured I needed some other ways to prepare fish. For whatever reason I decided to take a swing a fish cakes.
I scanned a few recipes plus threw in a few things of my own. Basics of the recipe are cooked tilefish, bread/panko crumbs, eggs, onion, celery, garlic, horseradish mayo, mustard, lemon juice, and a few seasonings including a little bit of Old Bay. Fry the cakes in butter and serve with either cocktail sauce or honey mustard. Ooooohhhhh, baby. I'm real happy with the way these came out. Worked great on Bluefish which I caught last fall as well and these can be on the stronger side.

PG asked for my cheesecake recipe in another thread:
The recipe I use has been adapted from a "Lindy's Cheesecake" recipe published in our local paper years ago. I adapted it to fit our situation and likes.
Tip: Leave the cream cheese overnight on your counter until its room temperature. Put it in the mixer bowl with the sugar and start mixing. I use the wisk attachement to the mixer to get a fluffy and airy batter. Keep the mixer on and start assembling the other items. The idea is to make the cream cheese as smooth as possible.Be sure to periodically scrape the sides and bottom of the bowl to make sure all the cream cheese gets mixed.
Crust: I use Oreo Cookes for the crust, usually about 2 stacks of the package, put in food processor and make into crumbs. (Depending on your desires, you can use chocolate or blond Oreos.) Put crumbs in a bowl and add about 1/3 stick of butter mix well. Put the crumbs into a 9 inch springform pan and bake at 350 for about 15 minutes (The crumbs should have a slight toasted look.)
Once the crust has been removed: put a 9X13 inch pan of water on the bottom rack of the oven. This will keep the oven moist and help prevent the cheesecake from cracking.
Now for the recipe: (9 inch springform pan)
Five 8 oz packages of cream cheese (or Newfchatel)
1 3/4 cups sugar (more if you want)
1 1/2 Tsp grated orange rind
1 1/2 Tsp grated lemon rind
1/2 or 1 Tsp Vanilla extract
Five eggs (Add eggs one at a time)
2 Egg Yolks
1/4 cup heavy cream. (NOTE: I use plain fat free Greek yogurt, I have seen recipes using sour cream. Or... you can skip this part)
Special optional stuff: BEFORE adding the batter you can put in chunks of Chocolate Chip Cookie Dough on the bottom.
Special technique: pour half the batter into the pan. Melt a cup of Chocolate Morsels, add about a cup of the batter, mix well. You can leave it like that, or add some Grand Marnier or Bailey's Irish Creme. Mix well and gently pour evenly onto the batter in the pan. Gently pour the remaining batter on top. Put the cake in the oven at 350. After 40 minutes check to make use the top is light brown and firm, bake longer until evenly brown. Take the cheesecake out of the oven and cool completely.
I cut my cake before serving it. The secret to doing it evenly and well is to wash the knife off after every slice. Takes time but worth the effort.

I remember reading an article regarding the positioning of Oreo cookies in their packaging. How many faced one way and how many were opposite. Sadly I cannot find it.

I remember reading an article regarding the positioning of Oreo cookies in their packaging. How many faced one way and how many were opposite. Sadly I cannot find it. Oreo packaging is designed to lure children into satanic worship, and then pedophiles can track them (the cookie placement make them a phased-array antenna for broadcasting their location). Q has all the details! And oh yeah, mixing black cookies on white filling is brainwashing children into accepting "miscegenation" and other defilement of the white race!

I wish RC were more widely available. It was my soda of choice when I was living in Tennessee. MoonPies are icky sweet...not a match for RC ever.
